Medjool Date Power Balls

Ingredients

  • 1 cup (112 g) natural almonds
  • 16 Natural Delights Medjool Dates, pitted
  • 2 to 3 tbsp. water
  • ½ cup (30 g) unsweetened, shredded coconut 
  • ⅓ cup (240 g) raw almond butter or coconut butter
  • 3 tbsp. unsweetened cocoa powder
  • 1 tsp. cinnamon

Preparation

  1. Pulse the almonds in a food processor until coarsely ground. Transfer to a bowl. Pulse the dates in the food processor until almost smooth, adding up to 3 tbsp. water as needed, to help blend.
  2. Place the almonds back in the food processor with the coconut, almond butter, cocoa powder and cinnamon. Pulse the mixture until completely incorporated, scraping down the sides as needed. 
  3. Transfer to a large bowl. Scoop the mixture into 2-tablespoon balls, rolling with your hands; place the balls on a parchment-lined baking sheet. Cover and refrigerate until ready to serve.
